#3 - Sous Vide Machine. Cooking sous vide is when you put food in plastic and cook at a set temperature. The sous vide "wand" that heats the water holds the temperature perfectly, so you can cook something for lengthy periods of time, or marinating in sauces/spices, without the temperature rising and overcooking the product.
#2 - Cast Iron Pan. Print out a cast iron seasoning guide off the internet, buy a new pan, some ghee and a steel mesh scrubber - Bam, you just saved someone's cooking. Cast Iron is the easiest cookware to maintain, clean and cook with.
#1 - A Microplane. This removes just the exterior of citrus without getting that bitter pith. It is the best way to add extra fresh flavor to any dish - from salad to meat. The Microplane is also perfect for hard cheeses as it creates a light dusting of cheese as opposed to a heavy grate. This is an essential tool for cooking.
